Get on board with locavore dining at Miya’s Sushi in New Haven. An environmentally friendly approach to sushi has earned the restaurant numerous accolades including being recognized as one of the top ten healthiest restaurants in the U.S. by Gourmet magazine in 2012. And, Chef Bun Lai is a 2013 James Beard Foundation Award nominee. The menu aims to be as environmentally sustainable as possible, not only are fish and seafood locally sourced, including from his 100 acres of shellfishing grounds, but atypical invasive species are featured on their own menu. You won’t find tuna, shrimp, and farmed eel here. Instead clams, oysters, trout, are popular ingredients and flavors are anything but typical! The menu changes regularly, but be prepared for adventurous combinations you won’t find anywhere else. Vegetarians will appreciate that half the menu is veggie focused. Miya also makes their own pickled ginger and soy sauce, and their sushi rice is a mix of brown and whole grain.
