Maru Ichi is a popular Mountain View noodle joint specializing in homemade ramen, soba, and udon served in savory broths with lots of fresh toppings. On the menu, you’ll find the usual tonkotsu, shoyu, and miso broths, although it’s the kuro ramen that is the star. Named for its characteristic black broth, the mild soup has hints of garlic and sesame that give it its distinct hue, plus all of the standard toppings like chasu, egg, green onions, and a mound of bean sprouts.
