Bistro 100: Ingredients Sourced from Within a 100-Mile Radius

Petaluma's Bistro 100 is named for the philosophy to which its food-sourcing team subscribes. They only gather ingredients that originate within a 100-mile radius of the restaurant. That includes not only veggies, meats, and other foods, but also wine and beer. The result? Extremely fresh fare that leaves you feeling good.

Chef and owner Garrett Adair transforms the local ingredients into New American cuisine befitting wine country. The entrees include rack of lamb from Superior Farms, dressed with Canvas Ranch strawberries (incorporated into a gastrique) with lamb sauce, bread pudding, tarragon oil, carrots, and local baby fennel on the side. For something a bit more casual, order the burger crafted from Stemple Creek Ranch Angus beef, topped with Point Reyes gorgonzola and red onion marmalade. Wash down your dish with a glass of wine from the extensive list.
