Thomas Keller is the only American-born chef to be honored with three-star Michelin ratings at several different restaurants. He has received dozens of prestigious awards over the course of his long career, and today brings his expertise to a large and varied empire of restaurants, including Yountville's Ad Hoc, which specializes in family-style service.

The menu at Ad Hoc changes every week (sometimes even every day), based on what's fresh and in season, but always includes four courses that everyone at the table shares. For example, you might start with a kale Caesar salad topped with crispy capers and croutons, followed by a platter of buttermilk fried chicken with asparagus, red rice, and mushrooms on the side, and then finish with freshly-baked walnut bread, sour cherry jam, shortbread, and chantilly cream. Keller explains that the idea is to mimic what’s best about home cooking—everyone sharing the same dishes—while elevating everything to the kind of experience you expect in a fine dining restaurant.
