Passover begins at sundown and lasts for eight days. This holiday commemorates the emancipation of the Israelites from slavery in ancient Egypt. As the story of Passover has it, the Israelites fled Egypt in such haste that they did not have time to let their bread rise, so it was baked into flat crackers known as Matzo (or Matzah) which is traditionally eaten over the course of Passover.
