Al Sur Latin American Bistro: Favored Flavors

It’s easy to lose sight of the complexity of Latin American cooking when the entirety of what you’ve known is tacos and burritos. But Al Sur Latin American Bistro in Austin has made it its mission to bring all the character of Central American cuisine to Austin eaters. Once patrons get inside the brightly lit and welcoming two-room restaurant, they almost unanimously start with the Papa a la Huancaina. It's a traditional Peruvian salad with oven-roasted potatoes dressed in a huancaina sauce. Think queso sauce, but spicy; some of the best you’ve ever had! The white fish ceviche usually comes next. Follow it up with fresh, flavorful shrimp soup or the bold and smoky chipotle chicken. And yes: Al Sur also offers tacos and enchiladas.
