Hundreds of years ago, Brazilian cowboys, called “gauchos,” got creative with their cooking. The wanderers didn’t exactly have a proper kitchen, so they skewered and cooked meats over the open flames of their evening campfires. When Espetus Brazilian Steak House made its grand debut more than 15 years ago, its chefs took a leaf out of the book of these culinary pioneers.
They carefully cut and sear 12 to 14 different varieties of meats, paying careful attention to play up the natural flavors and textures of each. The meats remain on skewers as they’re passed off to the gaucho chefs/servers, who float around the dining room slicing the meats directly onto patrons’ plates.
