Sage Hill Inn Above Onion Creek: Farm-to-Table Fare in a Boutique Hotel

When you're a guest at Sage Hill Inn Above Onion Creek, you're guaranteed a table for dinner at the Restaurant at Sage Hill. But there's still a way to snag one if you just live nearby: place a reservation early. Chef Ryan Castille posts the week's menu the prior Thursday, so you have some time to decide if the prix fixe appeals to you. It'd be almost impossible to see something that doesn't, though, given that Chef Ryan relies almost exclusively on local farmers and purveyors for the ingredients.

That's the reason the menu changes on a regular basis, to incorporate whatever is in-season around Kyle that week. Richardson Family Farms contributes meat and produce from nearby Rockdale, while Dublin Bottling Works is responsible for the craft sodas—it's been in business since 1891. Small-batch coffee comes from Independence Coffee, and pasture-raised eggs hail from Austin's Vital Farms. The restaurant also sources craft beers and wines from local breweries and vineyards, so even the drink list boasts some local names.
