If you never considered Tex-Mex food for breakfast, then that's probably because you haven't stopped by El Roble in the morning. This popular eatery on Old Highway 81 hits it out of the park when it comes to spicy breakfast fare, and there's a drive-through to make your morning commute even easier.

Try the Mexican omelet, which comes with a pillowy dollop of refried beans on the side, as well as crispy bacon and potatoes. You can even add some extra chorizo for good measure. You can also dig into some crunchy breakfast tacos stuffed with eggs. El Roble remains open for lunch and dinner, too, so if you enjoy your breakfast, you might want to consider a repeat visit later in the week (or in the day) for a different meal.
