Sink a Spoon into Pho at The Rolling Spring Roll

It took only a year for the popularity of Joe Bui's Vietnamese cuisine to outgrow his food truck's small mobile kitchen. In 2013, he took the recipes he'd learned growing up and opened a brick-and-mortar location for The Rolling Spring Roll. This initial Farmingdale location has recently been joined by a second in Syosset, which only speaks to the strength of Chef Joe's pho, hot bowls, and, of course, spring rolls.
Start with his signature spring rolls, crispy creations stuffed with tender pork and vermicelli. This recipe comes straight from the kitchen of Chef Joe's mother. Save some room for the popular vegetarian pho, though, which teems with veggies and chunks of tofu. You can also opt for the more traditional beef or chicken pho. If you'd rather try one of the hot bowls, order yours with rice noodles or white rice and grilled beef satay, shrimp, lemongrass chicken, or even pork chops on top. You can also go for a slightly lighter banh mi sandwich on a traditional toasted baguette.
