Chef Gorji doesn't typecast Mediterranean cuisine as Greek or Middle Eastern fare. He enlists the foods and flavors of any country that touches the Mediterranean Sea to inform his menu at Canary by Gorji, from Spain and Italy to North Africa and Turkey. He also personally prepares each of his customers' dishes to-order, a luxury he's afforded by Canary's modest capacity: it holds only 10 tables.

Its small collection of tables is no accident. By only allowing a handful of guests into the restaurant at a time (and no young children), Gorji and his staff can ensure that each and every patron enjoys a slow-paced dining experience evocative of the countries from which Mediterranean cuisine hails. From beef tenderloin and ribeye to Arctic Char and pan-seared catfish, Gorji's menu reflects the best of the Mediterranean as expressed through local ingredients with a side of wine. In fact, he won't create a menu item if he wasn't able to secure fresh ingredients for it at the market that day.
