When it comes to ambience, Fairfax’s Sea Pearl really pulls out all the stops to make itself look good. A sleek modern design is relaxing and enveloping, making you want to sit and linger. Thankfully, the food is good enough to back it up. Offering New American cuisine with a California touch, Sea Pearl is the brainchild of chef and owner Sly Liao, who is adamant about his seasonally-changing menu. As you might expect from the name, the real star here is the seafood, which dominates most of the entrees. In addition to the usual suspects, there are some unusual offerings on display for adventurous diners, such as grilled pacu ribs—this meaty fish is kissing cousins to the deadly piranha, but tastes spectacular. Locals also rave about the delicious grilled flatbreads and the remarkably good tilapia, not a fish that usually wins friends.
