J Mueller BBQ: Hit The Pit

Texas is one of the country’s big destinations for barbecue, with a beef-centric menu and some serious slow-cooked flavor. The Hill Country is rife with barbecue joints, but locals will almost unanimously recommend J Mueller in Austin. Owner John Mueller hails from a barbecue dynasty in Taylor, Texas – his grandfather Louie’s restaurant is internationally known as one of the temples of Texas ‘cue. It took a lot for John to set out on his own, but he quickly found success in Austin. His business has had some ups and downs since then, but since opening the new location in Austin’s Bouldin Creek neighborhood, things have been looking up for Mueller. And for good reason – this is incredible barbecue, perfectly tender and flavorful. The brisket here is the meal of choice, and it’s done up as well as you can possibly do it. Beef ribs and sausage are also quite good. Note that this place has become a little more popular since it was profiled on Anthony Bourdain’s TV show.

Stubb’s: Legendary BBQ and Live Music

The legendary Stubb’s Bar-B-Q was originally opened in Lubbock, Texas, under the careful supervision of barbecue king Christopher B. Stubblefield. His insanely good slow-cooked meats quickly became a favorite food for central Texas’s burgeoning music scene, and eventually live music became a part of the Stubb's experience. Some of the biggest names in Lone Star rock and country played on his stage, and when the business moved to Austin it prospered even more. Stubb’s is now one of the hottest spots in Austin, continuing the tradition of bbq and great live music. Regulars rave that the beef brisket here can go toe-to-toe with any ‘cue in the world, and the sides, especially the rich macaroni and cheese, are out of sight. Live music most nights of the week features local and national bands, and the Sunday gospel brunch is truly awesome. Live gospel music, traditional Southern brunch foods like migas and fried catfish, and a great crowd will have you coming back for seconds.

Franklin Barbecue: Old School Barbecue

Franklin Barbecue isn’t your old Texas barbecue joint run by weathered Texans and frequented by tourists from North Carolina. Instead, its owner is the eminently hip Aaron Franklin, a horn rim-spectacled man with sideburns that give him the laid-back cool of Jermaine from Flight of the Conchords. As a reviewer for Austin360.com put it, Franklin Barbecue may be “the epicenter of the New Barbecue Nerd Movement.” That means taking the youthful vitality of the coffee-shop explosion, putting it in a food stand, and marinating it in Austin, Texas character. But don’t think that Franklin Barbecue has sacrificed flavor for cool. Its smoky, succulent brisket — and pork ribs that slide off the bone — have snagged more than a few regulars from other famed establishments.
