Impossible Pumpkin Pie Cupcakes

Ingredients
•⅔ cup all purpose flour
•15 oz pumpkin puree
•¾ cup sugar
•2 large eggs
•1 teaspoon vanilla
•¾ cup evaporated milk
•2 teaspoons pumpkin pie spice
•¼ teaspoon salt
•¼ teaspoon baking powder
•¼ teaspoon baking soda
•Whipped cream

Instructions
1. Line a 12-cup muffin tin with paper or silicone liners.
2. Preheat oven to 350 degrees.
3. In a bowl, whisk together flour, baking powder, baking soda, salt and pumpkin pie spice.
4. In a large bowl, whisk together pumpkin puree, sugar, eggs, vanilla and evaporated milk until well combined.
5. Add in dry ingredients and whisk until no streaks of flour remain and batter is smooth.
6. Fill each muffin cup with approximately ⅓ cup of batter.
7. Bake for 20 minutes and let cool for 20 minutes.
8. Remove cupcakes from pan and chill in the fridge for 30 minutes.
9. Top with whipped cream and sprinkle with more pumpkin pie spice or cinnamon on top and before serving.

Take in a Show at the Academy of Music in Center City

Built in 1857, The Academy of Music on Broad Street is the oldest Opera House in use not only in Center City, but also in all of the U.S. Modeled after La Scala Opera House in Milan, the Academy is home to the Opera Company of Philadelphia, the Broadway at the Academy performance series, and the Pennsylvania Ballet.

Philadelphia’s Magic Gardens: Take a Stroll Through This Magical Art Oasis

If you prefer to take your art appreciation outside of the museum, Philadelphia’s Magic Gardens is the ideal spot. Using what many would consider junk, artist Isaiah Zagar created a variety of public murals and mirrored mosaic art pieces both indoors and outside. The fully tiled inside space extends out into the outdoor garden spanning half of a city block, and the entire garden is more colorful and intricate than you could ever imagine. There are also eclectic statues made of bicycle wheels, glass bottles, and broken pieces of mirrors to reflect the light from the surrounding mosaics.

In addition to the gardens, Zagar also created a number of community art programs and ever changing exhibits held inside of the arts center. It costs just $5 for students and seniors, $7 for adults, and $3 for children to visit the Magic Gardens. Check the gallery’s website for information about seasonal hours.

Easy Pumpkin Drop Biscuit

Ingredients:
3 cups Bisquick
1 can pure pumpkin, 15 ounces
2 1/2 tablespoons honey
1/2 teaspoon nutmeg
1/4 teaspoon ginger

Directions:
Combine all ingredients in a large mixing bowl and stir together until well blended.
Drop dough onto a parchment lined baking sheet (15-18 medium sized biscuits).
Bake at 425 degrees for 10 – 13 minutes, checking for doneness with a toothpick.

Slather with Whipped Maple Cinnamon Butter and enjoy!

Strawberry Ghosts

Ingredients
30 fresh strawberries
8 ounces white baking chocolate, chopped
1 teaspoon shortening
1/8 teaspoon almond extract
1/4 cup miniature semisweet chocolate chips

Directions
Wash strawberries and gently pat with paper towels until completely dry. In a microwave-safe bowl, melt white chocolate and shortening at 50% power; stir until smooth. Stir in extract.

Dip strawberries in chocolate mixture; place on a waxed paper-lined baking sheet, allowing excess chocolate to form the ghosts' tails. Immediately press chocolate chips into coating for eyes. Freeze 5 minutes.

In microwave, melt remaining chocolate chips; stir until smooth. Dip a toothpick into melted chocolate and draw a mouth on each ghost. Refrigerate leftovers. Yield: 2-1/2 dozen

Peanut Butter Balls

Mix together:
2 c. smooth peanut butter
3/4 c. butter (softened)

Add:
3 3/4 c. powdered sugar
3 c. crushed crisped rice cereal (measure out 3 c. then crush)

Roll into balls. Melt 1 lb. of chocolate. Dip balls into chocolate. Remove with a toothpick. Place on foil or wax paper until cool.
