After you heap your plate at the gigantic ‘salad festival’, waiters bring an assortment of sizzling seasoned meats to your table, slicing them onto your plate. A card placed on your table allows you to signal when you’re ready for more meat –green side up means yes, red side up, no. The ‘salad festival’ can serve as a meal in itself, with beans, rice, pastas, soups, stroganoff and bread, so vegetarians can forgo the meat and still get satisfied.
