Grilled Brioche With Brie, Dark Chocolate, and Blueberries Recipe
This grilled cheese can get a bit messy so I recommend enjoying it with a fork and knife (though I did manage to cut it in half and pick it up for the photos). If for some reason you can’t find brioche, challah is an excellent substitute. I used a 60-percent bittersweet chocolate but this would also be wonderful with a darker chocolate or a milk chocolate! The chocolate doesn’t need to melt completely into the sandwich; in fact, it’s better if it stays slightly solid in the middle while melted around the outside. It will give the grilled cheese a nice bite.½ cup fresh blueberries
1 teaspoon confectioners’ sugar (plus more for dusting)
1-2 tablespoons unsalted butter, softened
2 slices brioche
3½ – 4 ounces Wisconsin brie
2 ounces bittersweet chocolate
Place the blueberries in a small nonstick skillet over medium heat. Swirl the pan periodically as the berries become darker in color and the juices begin to release, approximately 5-6 minutes. Remove from the heat and use a potato masher to mash the blueberries and make a compote. Stir in the confectioners’ sugar.
